Variety: Grolleau Terroir: From a single parcel on a limestone mound on Cretaceous yellow chalk near Durtal, in the northernmost region of Anjou. Resurfacing limestone, excellent drainage, southern exposure, and spotless farming.

Viticulture: Purchased organic grapes with low pH (3 to 3.1) and yields that don't surpass 45 hl/ha to guarantee full maturity and concentration.

Vinification: No malo, matured for 6 months on lees in bottle, no dosage (Brut Nature), overnight maceration in the press, bottling close to the end of ambient yeast fermentation (ancestral method).
