Aromatics
Citrus, ripe peach, delicate herbal notes and cool slate minerality. On the palate concentrated and tightly structured, lifted by brilliant acidity. The finish is long, saline and vibrantly mineral.
Vinification
Hand harvested, spontaneously fermented and matured in stainless steel and large neutral oak to preserve purity and tension.
Serving Recommendation
Serve at 9–11 °C. Excellent with fine fish, shellfish or enjoyed on its own.
Ageing Potential
Outstanding – the 2020 vintage will evolve gracefully for 15–20 years.
