Origin & Style  

Timo Mayer’s 2017 Syrah comes from the cool slopes of the Yarra Valley. Known for his minimal intervention approach, Mayer works with whole bunch fermentation and gentle extraction to highlight purity and terroir. The result is a refined, almost Burgundian expression of Syrah – fresh, spicy and beautifully textured.

Aromatics  

Dark cherry, black olive, white pepper and cool herbal notes. The palate is juicy, precise and silky, with fine tannins and vibrant acidity. Long, spicy and mineral finish.

Vinification  

Spontaneous fermentation, significant whole bunch component, minimal intervention. Aged in used barrels to preserve freshness and finesse.

Serving Recommendation  

Serve at 15–17 °C. A short decant enhances aromatic complexity.

Ageing Potential  

Very good – drinking beautifully now, with 5–7 years of further development ahead.
