Organic Vespaiola grape selection from a single vineyard: steep slope, old volcanic soil, constante breeze and sun exposure. Spontaneoulsy fermented in tremperature controlled strainless steel tank for 3 months and additional 6 months resting with the fine lees. It is then bottled and aged for at least 3 more years.
