Viticulture: Organic (in official conversion), biodynamic experimentation, cover crop, horse-plowing, and no-trimming.
Whites: Vinification: No filtering, pneumatic pressing, vinification (with no additional SO2), and aging in stainless steel tank, hardwood tank, or 600-liter barrel.
Vinification (red): Partial to 100% entire cluster, vinified in open tank (with no additional SO2), maceration lasts approximately one month but with very little extraction, matured in wooden tank or older barrel for around 15 months with careful racking, no fining, no filtration.
